Almond Poppyseed Protein Muffins

Protein and Muffins… Together?! You Bet!

As you may know, I’m obsessed with Kodiak Cake Mix. They just released a new flavor, Almond Poppyseed. Guys, it’s amazing! I used this mix and added my own flair to create my muffins. Check out the recipe below!

Makes 6 Large Muffins

Calories per Muffin: 170

Protein: 12.2 grams

Carbs: 16.3 grams

Fat: 6.1 grams

Ingredients

1.5 Cups Almond Poppyseed Kodiak Mix

46g Egg Beaters

2 Tbsp Unsalted Butter (Softened)

1 Cup 2% Milk

1 tsp Vanilla Extract

1 Tbsp Stevia

1 Scoop dotFIT Wheysmooth Protein Powder

 

Preheat oven to 350 degrees. Combine all ingredients in bowl and mix. Scoop mix into oiled muffin tins. This recipe will make 6 large muffins or 8 small muffins. Bake for 12-14 minutes. Let cool and enjoy!
